How would you eat any kind of Mexican food if you didn't have sour
cream? How would you make hamburger stroganoff? Baked potatoes?
The answer is cashews, of course.
Seriously, though, I never would've thought to make sour cream out of cashews. But it seems to be a pretty good alternative for people who don't eat dairy.
I have to say that the taste worked quite well, but even though I processed and processed the soaked cashews, the sour cream still turned out a tad grainy. One day, when all my dreams come true and I own some high-powered food processing appliances, I will try cashew sour cream again.
