3 c uncooked brown rice, cooked
10 oz canned chicken
1 green pepper, chopped
1/2 c chopped onion
3 cloves garlic, minced
1 tbsp lime juice
1/2 tsp dried cilantro leaves
1 tsp Penzey's fajita seasoning
1 tsp salt
1 can black beans, drained
1 head of lettuce, chopped
shredded cheddar cheese
In a frying pan or wok, saute onion and garlic in some olive oil until tender.
Add green pepper, chicken, lime juice, cilantro, fajita seasoning, salt, and beans.
Cook until heated through.
Stir the mixture into your rice.
Serve the "paella" on a bed of lettuce, topped with cheese and sour cream. Serves six.
